Coffee-Crusted Salmon with Balsamic Glaze

Ingredients:

  • 2 salmon fillets (skin-on or off)

  • 2 tbsp finely ground coffee (Triple Crown from Heights Coffee works perfectly!)

  • 1 tbsp brown sugar

  • 1 tsp smoked paprika

  • ½ tsp garlic powder

  • Salt and pepper to taste

  • 1 tbsp olive oil

  • For the Balsamic Glaze:

  • ½ cup balsamic vinegar

  • 1 tbsp honey (or maple syrup)


Instructions:


  • Make the glaze:

  • In a small saucepan, simmer the balsamic vinegar and honey over medium heat.

  • Stir occasionally until it reduces by about half and thickens (8–10 minutes).

  • Set aside to cool—it will thicken more as it cools.

  • Prepare the coffee rub:

  • In a bowl, mix the ground coffee, brown sugar, paprika, garlic powder, salt, and pepper.

  • Rub the salmon:

  • Pat the salmon dry and rub olive oil over each fillet.

  • Press the coffee mixture onto the top of each fillet to form a crust.

  • Cook the salmon:

  • Heat a nonstick or cast-iron pan over medium-high heat.

  • Add a drizzle of olive oil, then place the salmon fillets crust-side down.

  • Cook 3–4 minutes per side (depending on thickness), or until done to your liking.

  • Plate and drizzle:

  • Serve the salmon with a drizzle of the balsamic glaze over the top or around the plate.

Bonus Tips:

  • This goes great with roasted sweet potatoes or a bed of arugula salad with citrus vinaigrette.

  • The glaze can be made ahead and stored in the fridge for a week.
