For the Roasted Baby Potatoes
1 lb baby potatoes, halved
2 tbsp olive oil
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp dried rosemary or thyme
Instructions:
Roasting the Baby Potatoes:
- Preheat your oven to 400°F (200°C).
- Toss the halved baby potatoes in olive oil, garlic powder, salt, black pepper, and dried rosemary.
- Spread them evenly on a baking sheet and roast for 25-30 minutes or until golden brown and crispy.
Cooking the Trout:
- Heat olive oil in a large skillet over medium-high heat.
- Pat the trout fillets dry with a paper towel and season both sides with salt, black pepper, and paprika.
- Place the fillets skin-side down in the skillet and cook for 3-4 minutes until the skin is crispy.
